About the role

The Chef De Partie – Baker leads the daily bakery operations on board, ensuring high‑quality bread production, compliance with health regulations, and an attractive display for guests. Working closely with the Head Baker and Executive Chef, you will manage a multicultural team in a fast‑paced hospitality environment.

Key responsibilities

• Oversee smooth daily operation of the bakery shop and production according to company policies.
• Coach, supervise and evaluate bakery staff together with the Head Baker.
• Produce, present and control the quality of the bread assortment for daily menus.
• Prepare production forecasts, record leftovers and manage food‑cost budgets.
• Set up bread displays across all buffets and ensure timely replenishment.
• Maintain strict compliance with United States Public Health (USPH) rules and prepare for inspections.
• Coordinate cleaning schedules, equipment care and pantry readiness for USPH audits.
• Handle requisition and transport of bakery supplies from main stores.
• Complete daily production and consumption recaps for the Executive Chef.
• Ensure staff punctuality, proper uniform standards and adherence to hygiene policies.

Required profile

• Minimum two years’ experience as a Chef De Partie – Baker in an upscale hotel, resort, cruise ship or convention banqueting service (shipboard experience preferred).
• Culinary school degree.
• Strong management abilities in a multicultural, dynamic setting.
• Excellent communication, problem‑solving and decision‑making skills.
• Customer‑service orientation, team‑building and conflict‑resolution capabilities.
